Most days this is how I survive. I usually eat breakfast and lunch after 2pm and live off of pecans and what ever dried fruits I find in the shop. • This time in Mexico I actually was craving gum drops. Mexico City is so advanced in design, art, food & culture and the people that leave are people with incredibly tough circumstances mostly in rural areas. Like my parents, where they are from they didn’t see opportunities for a young couple like them. • • My sisters and I are so grateful to them for the choices they made. Now that we are adults we get to discover MX and it’s beauty on our own. • • This is the second year I choose to celebrate my birthday there. • • I feel like I’m connecting with a side of me of I never knew. Every city is different and there are so many cultural differences within each state from the food they eat to the languages they speak. • • I love my sisters and I had moments by myself but I’m glad for moments were we just laughed at nothing. ☕️I have a serious problem with coffee. I left my laptop in my husbands truck. So I drove to Irving to pick it up and thought to myself I’m halfway to Coppell & I have some time. • • • ☕️So I pick up my friend and drive to @georgecoffeeandprovisions? It’s such a beautiful place and I was happy they had non-dairy milks. As far as the food situation the plant based offerings they do have are fruit or bars. • • • ☕️Pictured: lavender latte made with coconut milk & almond cortado. Cortado power lasted from 10:30a to 7:30p. With no extra coffees in between. I’m a sucker for latte art. How to survive when you’re learning to how to be plant based make friends with people that are plant based. Luckily during my transition I made friends with some supportive ass women! @christinaisblue was my plant based question go to. Then I met @instajennypenny, @chachachanise & @ashnicksss from @eatelectrickitchen. When it got hard for me to cook during our busy chocolate season they cooked meals that my whole (non plantbased) family could enjoy. Today we hosted two vegan chocolate making classes and mini pop up after almost two years of deciding that I didn’t need meat or dairy to live. Growing up Mexican American meant that our vacations were spent in Mexico visiting our grandparents and extended family. ___ Our dad being the oldest was responsible for our extended family . So my parents would load up the car with things our family needed and after a 16 hour drive we would spend about seven days in rural Mexico. ___ This meant no American food close by for 3 very American girls. Our tradition became as soon we crossed the border back into Texas our parents would take us to McDonalds. ___ Now my tastes have changed but the urge for a burger hasn’t. Not the cutest photo but it has a funny story. I was fast asleep after 3 hour hike in #soconusco to visit cacao trees I was exhausted & hot and took full advantage of this maca. My sister snapped this picture and after this photo she saw a huge lizard in the garden she went to snap a pic and scared it. It scurryed right under us and for some reason I heard it’s nails running on floor and almost fell out of the maca. Point of the story there’s no rest in the jungle you have to be on your toes.
